Frequently Asked Questions About Fresh Tuber brumale
Practical guidance on identifying, storing, cleaning and using fresh Black Winter Truffle.Tuber brumale is an edible European truffle species commonly known as Black Winter Truffle or Winter Truffle. Mature specimens typically have a dark brown to black exterior with a naturally textured surface and a dark grey to black interior crossed by pale branching veins.
Colour, marbling, size, shape and aroma vary naturally according to maturity, freshness, growing conditions, season and the individual harvest.
No. Tuber brumale and Tuber melanosporum are separate truffle species, although both are harvested during the colder part of the year and may have dark external surfaces.
Terra Ross uses Black Winter Truffle as the primary English commercial name for Tuber brumale and Black Truffle for Tuber melanosporum. The scientific name provides the clearest species identification.
Fresh Tuber brumale generally has a dark brown to black, naturally textured exterior. The interior may range from dark grey to black and is crossed by pale branching veins.
Individual specimens may differ in size, shape, surface appearance, interior colour and marbling. These differences are normal characteristics of a wild-harvested natural product.
Fresh Tuber brumale has a characteristic winter-truffle aroma and flavour. Its aromatic intensity and exact profile vary naturally according to maturity, freshness, growing conditions, season, handling and the individual specimen.
Commercial grade mainly describes physical selection and presentation. It does not guarantee a specific aroma intensity.
Fresh Tuber brumale can be sliced, grated, finely chopped or incorporated into culinary preparations according to the selected product and recipe.
It is suitable for pasta, risotto, eggs, potatoes, butter, cream-based sauces, mild cheeses, fillings and restrained meat dishes. The exact recommended use may differ according to the commercial grade and physical characteristics shown on the individual product page.
The appropriate quantity depends on the recipe, aroma intensity, maturity, number of servings and personal preference.
Begin with a moderate amount and adjust according to taste. A smaller quantity may be sufficient when the truffle complements other ingredients, while a more generous quantity may be used when it is intended to be the principal aromatic element of the dish.
Refrigerate fresh Tuber brumale promptly at approximately +2°C to +4°C. Wrap the specimens in clean, dry absorbent paper and place them in a clean, closed glass container.
Replace the paper every day or whenever it becomes damp. Inspect the truffles regularly and do not wash, slice, grate or chop them until shortly before preparation.
Fresh Black Winter Truffle is highly perishable and should be used as soon as possible. For the best aroma, flavour and texture, consumption within approximately 5–8 days is generally recommended, depending on the condition of the product when received.
This is general guidance rather than a guaranteed shelf life. Always inspect the aroma, firmness, surface and overall condition before use.
Clean fresh Tuber brumale shortly before preparation. Remove loose soil carefully with a soft food-safe brush.
If necessary, use a small amount of cold water and brush gently. Dry the specimens thoroughly with clean absorbent paper. Avoid prolonged soaking, aggressive scrubbing and unnecessary removal of the natural surface.
Fresh specimens are inspected, wrapped in absorbent paper and placed in food-safe protective packaging. Orders are dispatched using Express Delivery in Insulated Packaging with cooling materials where appropriate.
The insulated packaging is designed to help protect the product during transit but does not constitute a continuously monitored or guaranteed refrigerated cold chain. Available delivery services and estimated transit times depend on the destination and are shown at checkout.
